This crowd-pleasing cocktail from our list is a fusion of Italian Malfy Gin Rosa, Aperol, citrus and fresh watermelon, topped with edible flowers and a fluffy little cloud of fairy floss.

"I love that this drink is quite an easy, quick cocktail to make yet presents so well with a wow factor that suits St Siandra so perfectly,” says Adam George, St Siandra’s restaurant manager and curator of our drinks list.

“The flavours balance out evenly with enough sweetness to keep the sweet cocktail fans happy but it's still light with the citrus. This creates the balance along with the spirits and sweetness coming from the watermelon and not from a sugar syrup or refined sugar source.”

So jumpstart those sundowner vibes with this easy concoction that takes just a few minutes to whip up.

Ingredients

30ml Malfy Gin Rosa

15ml Aperol

20ml lime juice

60ml fresh watermelon, juiced

Method

Shake all ingredients together and strain over ice in a rocks glass.

Top with fairy floss and edible flowers.

Tips for best sips

● If you can't get fresh watermelon, a good quality bottled fresh watermelon juice works perfectly.

● When using fresh watermelon make sure to double strain.

● If you don’t have lime juice, try lemon juice.

● Fill the glass nice and full with ice so the fairy floss rests on top for flawless social media snaps.

● White fairy floss helps to make the beautiful pink pop in the glass.
